Stuffed Shells

Well here I am again with another update about my cooking adventures!

So currently I am working a later shift at work so I have to make my dinner before I go to work and then reheat it while I'm there. Well for anyone that knows me at all knows that I am not a huge fan of reheating food, so this has been an adventure.

In addition to this new cooking adventure and new shift at work I am also trying to get into a new school! I really want to finish school, but actually going to a class and making it work out with my work schedule has been really hard. So here's to hoping this new school works out!

OK so with all that said the other morning I was on the phone with an enrollment advisor and was in the process of making stuffed shells! Sorry no picture of this one. So i figured this would be an easy recipe and I wouldn't have a hard time making it. For some reason I have a hard time working with spinach! don't ask why, but I seem to have a hard time putting just the right amounts into things. I always feel like I put too much and I'm eating spinach, with a little noodle on the side. So the trick with this was going to be adding the right amount of spinach!

I prepared the shells, put them in the oven, got ready for work while they were cooking, and took them out of the oven with a few minutes to spare before I needed to leave for work! I put one on a plate and gave it a chance! They were great!!! Into a tuperware they went and off to work I ran!

Next time I make them, I will add less spinach (because big surprise I put too much in there). Other than that, they tasted great, and weren't bad reheated!

cake pops for the superbowl!

My New Adventure

Ok, so once again I know it has been a while since i have posted anything. Hopefully that will change with this new project.

Here's how it all started:
So my cousin and his amazing family were in town for a wedding and I was lucky enough to get to spend some time with them and my grandparents on Saturday. Amanda (whom I get so many craft inspirations from) and I were talking about cooking and I had mentioned a blog I was reading called "chef in training". She gave me a great idea!!!

So keep in mind the reason I am reading this blog is because I am not a very good cook. My mom is an amazing cook and baker, my roommate is a great cook, but my cooking abilities are limited (really limited).

So here is the new adventure, I am going to start keeping you all posted about the recipes I am making. I will a recipe and make it and hopefully that day or quickly after update you all about how it went!!

So to start it off I got an Oreo truffle recipe from Chef in Training and just had to make them! They looked too good to pass up. Now, like I said I before I need simple recipes to start off with and this was way simple, but all in all I would say they turned out pretty good.

Thanks Amanda for this great idea! I'll try to keep this updated as much as possible! Feel free to send me your easy recipes!I can't wait to get some cooking under my belt and hopefully behalf as good as my mom!

Goblin Valley

Last weekend I went to Goblin Valley with a good friend and several of her friends. It was an amazing time! It was so pretty out there and we missed the bad weather SLC was having (thank goodness). Here are some pics from our windy, but super fun weekend adventure

- What wouldn’t I do? I would finish school! Travel the world! Live somewhere warm (and move if it ever gets cold). Donate to a charity to find a cure!

- Music, family and friends!

-I don’t have kids, and if I ever do their bedtime will be early (I love my sleep time)!

6. If you are currently in a relationship, how did you meet your significant other.
-my picker is currently disabled!

7. What kind of books do you read?
-whatever I feel like!

8. How do you see yourself in 10 years?
- Finally being done with school! Have a good career!!

9. What's your fear?
-being alone! Moths! Spiders that give you a death rash!

10. Would you give up junk food for the rest of your life to see outer space?
- Um... No! I don’t want to see outer space that much (if you were to ask me if I would give up candy to travel the world, that answer would be yes, no questions asked)!!!

11. What is the first thing you do when you wake up?
-go to the bathroom (I think this is what everyone does)

12. If you could change one thing about your significant other, what would it be?
-I don’t think you should change things about your significant other... You are with them for a reason and you should embrace that!

13. If you could change your name to anything, what would it be?
-I love that I have a boy name (I haven’t always, but I do now…and I wouldn’t change a thing).

14. If you had to choose between 6 months of sun or 6 months of rain, what would it be?
-This is a no brainer! SUN for sure

15. If you could eat only one food for the next 6 months, what would it be?
-apples

16. What is the thing you enjoy about blogging the most?
-I love that I can just say how I feel and type whatever I want… I’m a girl, what can I say, it helps with that emotional thing.

17. Salty or sweet foods?
-Sweet. I don’t like salt very much!

18. What items are in your purse right now?
-the kitchen sink

19. Vacation on the beach or in the mountains?
-The beach for sure!! I live in Utah, and lived on the dot on the mountain for years… I want to see a beach and just lay there in the sun

20. What do you watch on TV you know you shouldn't?
-What do I watch that I shouldn’t? Well I watch American Idol does that count as something I shouldn’t watch?

2011 Here I Come!

Happy New Year

So I know this post comes a little late, but better late than never right? I've been battling a cold and a new job so it has been hectic lately.

I rang in the new year very low key this year. I was actually sick so I didn't do anything resembling fun. I did watch the ball drop in Time Square on TV though! Now that the new year is here it is time for change. Last year I learned a lot about who I am and where I want to go in life. I learned a lot about Love and how it affects everything we do! I also moved around in my job a lot and it gave me so much perspective about where I want to be. This year I want to live, make mistakes, love, be a friend, overcome obstacles, and make big changes!!!

The good news is I've made some 2011 life changes and I couldn't be feeling better about them. So here are my list of things I want to accomplish in the new year:

1 - Exercise once a day
2 - Work towards my goal weight
3 - Attend the annual Walk for the Cure
4 - Support a charity
5 - Do something I have never done before (I haven't decided what this will be yet)
6 - Advance in my career
7 - Continue working towards a degree in school
8 - Learn to make a new craft!

This is the start of my new years list! As I go through the year I'll keep you posted on anything else that I may add. I know it doesn't seem like much to start off with but I want to make sure I complete everything on my list so I don't want it to be overwhelming.

The good news is I have already started on some of them and making good progress! I hope you all had a Happy New Year and I look forward to a great 2011.

Happy Halloween!!

Powell-a-palooza

Last month Anthony played at Powell-A-Palooza. Andrea and I braved the road and drove down to lake Powell. It was beautiful down there and we got to hear some great music. One thing I learned for sure is that I dislike the red sand that your feet sink into, and that although your at a lake it is not really a flip flop wearing place!! We spent some time on a house boat. The weather was Amazing

I'm not sure why we even took real clothes, swimsuits were the choice item while we were there.

Life Update

So here is the August life update!!

It has been a crazy month and I have been working like crazy (I know I always say this, but this time it is true). Yesterday was the end of a 13 day work streak, I am glad that it is finally over, but because I seriously love my job it was not too bad. Today I finally get to catch up on all the things that took a back seat to work - like laundry - and cleaning! But good news I'm making a dent on all that today.
I'm pretty darn sad to see summer going. I totally need to move somewhere that has summer year round because I sure do love the sun. Good thing I get to have one more sunny filled day before its over (pictures to come).

I also want to mention that today 22 years ago was a great day when my little cousin John was born. I cant believe we are all growing up so fast. I swear it was yesterday that John had to play Mufassa and guard "pride rock" (aka grandma) all day. I'm pretty sure it is our fault that he is the sports lover that he is... all because we forced him to sit with grandma all day (so he ended up watching a lot of baseball). Its a good thing we made him one tough cookie when we were younger - life is hard and having Andrea there to try to kill him a few times prepared him for that!
HAPPY BDAY JOHN!! We all love you so much!

Another Year Older

So I don't officially get any older until Midnight but my amazing roommate threw me a little bash last night and it sure got the weekend off to a good start!!!

Well first Emily came home Thursday night with a big box and refused to let me look at it. FINALLY on Friday at like 8:00pm she finally revealed what was in that box and it was a cake full of wonder memories. Below are 5 reasons this cake rocks!!
1 - Looking for Condos (what a daycare center)
2 - TV commercials
3 - interrupting intense conversations
4 - 2 words "Artic Circle"
5 - having a roommate that remembers these amazing adventures


Ivy, Joel, Saij, and Zeek came to wish me HB! I always love seeing them! Ivy was enjoying the heat!!
Emily put a lot of hard work into this night. Her finger has a bruise to prove! It was a perfect night for a BBQ and there was great food!

My BFFF was there and made it a great night. Sarah always knows how to make a night rock. Saij was the photographer of the night which would explain why all the people in the pictures are looking down :)

Here is the little photographer now. Saij ran into my house and yelled "Happy Birthday Randi" and gave me a huge hug and a kiss. She is the cutest thing ever!


Thanks to everyone for making this night rock. My soon to be famous friend Pat stopped by too which is always a treat because these days he is always on tour! I guess turning a year older isnt as bad as I think. This year is bound to be filled with great adventures~

Backstreets Back ALRIGHT!

Backstreet Boys!
Once upon a time (about 11 years ago). I was a pre-teen that loved a boy band calls the BackStreet Boys, and now at age 22 NOTHING HAS CHANGED!
Last night I went with Annie and Brandi to see "the comeback concert of the year" and yes it was the BackStreet Boys. It was amazing. We went to the training table for the one and only cheese fries and then off to the Energy Solutions Arena.
I have to say this was one of the funniest things I have done in a while! I loved this group when I was little and I'm pretty sure I love them just as much today. For your viewing pleasure I have included wonderful pictures below!
