Stuffed Shells

Well here I am again with another update about my cooking adventures!

So currently I am working a later shift at work so I have to make my dinner before I go to work and then reheat it while I'm there. Well for anyone that knows me at all knows that I am not a huge fan of reheating food, so this has been an adventure.

In addition to this new cooking adventure and new shift at work I am also trying to get into a new school! I really want to finish school, but actually going to a class and making it work out with my work schedule has been really hard. So here's to hoping this new school works out!

OK so with all that said the other morning I was on the phone with an enrollment advisor and was in the process of making stuffed shells! Sorry no picture of this one. So i figured this would be an easy recipe and I wouldn't have a hard time making it. For some reason I have a hard time working with spinach! don't ask why, but I seem to have a hard time putting just the right amounts into things. I always feel like I put too much and I'm eating spinach, with a little noodle on the side. So the trick with this was going to be adding the right amount of spinach!

I prepared the shells, put them in the oven, got ready for work while they were cooking, and took them out of the oven with a few minutes to spare before I needed to leave for work! I put one on a plate and gave it a chance! They were great!!! Into a tuperware they went and off to work I ran!

Next time I make them, I will add less spinach (because big surprise I put too much in there). Other than that, they tasted great, and weren't bad reheated!

Well next on my list:
cake pops for the superbowl!

My New Adventure

Ok, so once again I know it has been a while since i have posted anything. Hopefully that will change with this new project.

Here's how it all started:
So my cousin and his amazing family were in town for a wedding and I was lucky enough to get to spend some time with them and my grandparents on Saturday. Amanda (whom I get so many craft inspirations from) and I were talking about cooking and I had mentioned a blog I was reading called "chef in training". She gave me a great idea!!!

So keep in mind the reason I am reading this blog is because I am not a very good cook. My mom is an amazing cook and baker, my roommate is a great cook, but my cooking abilities are limited (really limited).

So here is the new adventure, I am going to start keeping you all posted about the recipes I am making. I will a recipe and make it and hopefully that day or quickly after update you all about how it went!!

So to start it off I got an Oreo truffle recipe from Chef in Training and just had to make them! They looked too good to pass up. Now, like I said I before I need simple recipes to start off with and this was way simple, but all in all I would say they turned out pretty good.

Thanks Amanda for this great idea! I'll try to keep this updated as much as possible! Feel free to send me your easy recipes!I can't wait to get some cooking under my belt and hopefully behalf as good as my mom!
